I use a professional, low speed, water-cooled stone wheel to gradually reshape the bevel of your blade to its original angle. After grinding, I hone and polish the edge on a leather honing wheel with a fine compound to remove burrs and achieve a razor-sharp edge.

Please have the knives somewhere accessible (you can leave them on your doorstep, or I can come inside). I will give you an estimate on how long it will take and how much it will cost. At the end of the day, I will return your knives and collect payment.

A sharp knife should cut effortlessly. If you notice it struggling, tearing food, or sliding off surfaces, it’s time for sharpening. Try the paper test! If it doesn’t slice cleanly through a sheet of paper, it needs sharpening.
Honing realigns the edge of your knife, helping it maintain sharpness without removing much metal. Sharpening removes material from the blade to restore its edge when it’s dull. Honing is done regularly, while sharpening is needed less often, typically when the edge starts to feel dull or ineffective.

No. The sharpening stone I use spins very slowly and has a precise angle measuring system that allows me to sand the bevel only. I alternate between sides and gradually reduce the grit of the wheel just enough to form a consistent edge. Honing and stropping remove miniscule amounts of metal.
Each blade is secured in a waxed canvas knife roll. I bundle the rolls in a towel, pack them in my backpack, and bike swiftly to my shop.
